docs: changelog + README for the UI overhaul (v1.1)

Bump APP_VERSION to 1.1 with a "What's new" entry covering the menu bar,
tabbed control deck, side-by-side panels, status bar, and visual polish.
Add an Interface section to the README. Shortcuts unchanged.
