fix: pin transformers<5.0 for EAT model compatibility

EAT remote model code (worstchan/EAT-base_epoch30_finetune_AS2M) is
incompatible with transformers 5.x — missing all_tied_weights_keys
attribute added in the v5 PreTrainedModel API.
